FATHEAD PERSONAL PEPPERONI PIZZA
Let me start by saying that I love this crust more than the regular stuff. I don’t know what it is; actually it’s probably the cheese. If you are looking for low carb pizza alternatives look no further.
INGREDIENTS
1 cup of mozzarella
1 tbsp of cream cheese
1/2 cup of almond flour
1 tsp garlic salt
1 large egg_white only
1 tsp avocado oil
3 cherry tomatoes
1/2 ounce shredded cheese
4 uncured pepperoni
THE CRUST
Place the mozzarella and the cream cheese into a bowl, microwave for 60 seconds and then mix till smooth. Then add in the almond flour, garlic salt, and egg white and mix well. Use avocado oil to make the dough easier to form. Once the dough is shaped to your hearts desire, bake in the oven at 425º for 15 minutes.
THE TOPPING
Thinly slice the tomatoes, rinse and season to taste. Evenly spread the tomato slices onto the crust. Add a little bit of the cheese then the four slices of pepperoni. Top it all off with the remainder of the shredded cheese then bake in the oven at 425º for another 5 minutes.
